The wine has three ways of being made – traditional, wine cutting and sangria. 

  • rosé or pink 

Traditional: the grapes are pressed whole and kept together for a period of two to twenty-four hours. Having temperature control, due to the maturation that influences the taste and color of the wine; 

Wine cut: used in some localities and prohibited in some places, such as France, it consists of mixing already made red wine with white wine. For connoisseurs, this may not be the tastiest of wines; 

Sangria: consists of removing about 10% from the must after pressing the grapes and before fermentation, this liquid is called sangria and it is used to make the wine pink.

It is noteworthy that the most prestigious rosés are produced in France, in the Provence region. The method used is the traditional one. 

As in Italy, Portugal, and South America, the countries that adopt this same technique are: Argentina and Chile. 

  • White wine 

Also using red grapes, its production method is similar to that of red wine. The biggest difference is that the skins are separated from the wort, right after being pressed, so that it doesn't take on the taste or color of the skins. 

The grapes are pressed in a more gentle way so that the juice is extracted without crushing the seed and skins, which are kept at lower temperatures to obtain the light and fruity wine. 

The most used white grapes are Chardonnay and Sauvignon Blanc, which have French origin, but are produced on a large scale in several countries. White wines, which are made from white grapes, are called Blanc des Blancs. 

  • Sparkling wine

They are those wines with bubbles, the best known is Champagne, which has 

this name because it is produced in that same region of France. 

When exposed to temperatures higher than usual, some bottles began to explode, so over time some winemakers in the region learned to conduct fermentation and created a new product that characterized the production of the region. 

Sparkling wines can be red, rosé or white, the latter being the most traditional, with the presence of natural carbon dioxide in a noticeable amount.

This type of wine came about by chance, when the wine is bottled before completing its alcoholic fermentation and it continues to be made inside the bottle, so it ends up producing carbon dioxide and generating bubbles inside the drink. 

In 1907, the need arose to create a product similar to Champagne, but with a low cost, to increase production, so Charmat appeared. This method allowed the second fermentation to be carried out in tanks, so that they do not ferment inside the bottles. 

  • fortified wine 

This type of wine has in its composition the addition of other alcoholics, such as brandy or distillates, making the alcohol content higher than that of the others. 

This process started to be adopted as a way of preserving wine, because in the past it was transported by ships on very long journeys. 

Thus, to stop the fermentation of the grape and ensure the stabilization of the beverage, fortified wines emerged. 

This is because the alcohol in the distilled beverage kills the yeasts that are responsible for fermentation, thus leaving a large amount of unfermented sugar, making the beverage sweeter and stronger.
